We are celebrating my neighbor's birthday this evening and she requested my Black Forest Cake. Here is how I go about making it.

First make the cake. The dry ingredients are mixed and waiting for the liquid measures.

The batter is poured into 2 greased and floured 9 inch pans and baked.

This gives me time to make the cherry filling. Canned sour cherries that I drain.
The can open is a Swing Away that we have had for 25 years and has been mounted in 3 separate kitchens. I take it with me when I move.

The cherries get mixed with sugar, cornstarch and some reserved juice. Then cook until thick.

The cake layers are allowed to cool completely. Then I cut them in half horizontally yielding 4 pieces. One gets broken up into crumbs.

Just before assembly I make a whipped cream frosting stabilized with a touch of powdered sugar and cream of tartar. The whisk and bowl were chilled in the freezer first.

Assembly is a layer of cake, frosting and then some cherry filling.

Repeat for the next layer. Add the third layer and leave top clean. Frost the cake sides and press the crumbs into it.
Then use a pastry bag to pipe frosting stars around the bottom and top edges.

Spoon cherry filling onto top and it is finished.

The interesting thing about this cake is that the three components - cake, filling and frosting - taste just "okay" individually. The first time I made it I was disappointed in this considering the work involved. But once the 3 components are combined it is oh so gooood!

I see the Oregon cherries and am rightly proud.  we have one of the countries best Hungarian restaurants in Albany Oregon near me.  their signature cake is a 6 layer black forest with everything from scratch.   their name is Novaks and pastry is all incredible.  enjoy sir

I was surprised to see this thread bump to the top as it is 7 months old.

In those 7 months I have made the cake 3 times. It always gets rave reviews and recipe requests. When I say it was made from scratch and takes a few hours the recipe request is withdrawn.

Every time I make it,  I am amazed at how unremarkable tasting the 3 components are. Rather plain. But put all 3 together and the result is darn near Biblical Smile


This cake landed in my repertoire due to my wife. I suppose I should thank her. Dodgy
She came home from work on a Friday. Said she needed to make a cake for work for Monday. Mind you my wife does not cook at all. So  she meant I needed to make a cake. Them she dropped the bomb and said it should be a black forest cake. I perused recipes on the net and choose one. The rest is history.
