As part of her feast my wife requested her favorite dessert - cranberry apple pie.
I got this recipe from Cook's Illustrated magazine a few years back.

First I made the pie crust dough and put in the fridge to chill.
Then I peeled and sliced apples.

The apples were mixed with sugar, cornstarch and cinnamon and microwaved until just soft, then set aside to cool.

Next I cook frozen cranberries, sugar, orange juice and cinnamon to a jam-like consistency and set aside to cool.

Once the pie dough is chilled I  prepare to roll it out. I find the silicon baker's mat to be a big help.

Traditional technique calls for working the dough as little as possible to prevent the formation of gluten which is supposed to yield a tough and chewy crust..
I fold roll the dough out, fold into thirds like a letter going into an envelope and repeat for a total of 3 roll outs and folds. This puts the butter in thin "smears" in multiple layers within the dough. When baked the butter melts and the steam forms the desirable layers that make for a flaky crust..

After rolling the bottom crust I transfer to a pie pan and fill with the cranberry jam.

The apple filling goes on top of this.

Rollout and cover with the top crust. I like to add a little personal touch.

The word "mom" stayed intact during baking.

Baking the pie this way results in a tart cranberry layer and a sweet apple layer. You get sweet/tart in every forkful.
