That's a real toughy as every single part of the process is enjoyable (otherwise I guessing non of us would be here)...
But if I had to choose just one, it would probably be the first of the two cold water rinses near the end of the shave.

For some reason,most comments seem to be centered around the lather.For me it's just stuff I put on my face that's better than the stuff in the can for moisturizing whiskers and protecting skin from irritation.Put it on,shave it off,by the 3rd pass I'm mostly using water.
It's the razor armed with a quality blade that matters most to me,it's an instrument like a surgeon's scapel.I can feel it's balancing point in my hand,the subtle effect of small changes in technique etc,etc.
For me it's all about grabbing a fine razor and enjoying the feeling of making it perform as close to it's potential as possible...even if the lather's average,the brush quality poor etc.
