A 50% homeground wheat/50% Bread flour sandwich bread loaf(s). Here they are in the oven.

And sliced. The baker gets the best slice... the end that's crispy but still has the tender innards. There is little on the planet that can compete with fresh bread and butter for sensory satisfaction.

ps: the norwegian cookbook guru henriette schönberg erken stress that eating a bread the day it was made should be considered a crime! but how anyone can resist is beyond me...

Marius, and I made it from the wheat berries to the finished loaf with the Ankarsrum. What a fantastic machine it is! You remember contributing to my decision to get it, yes? It wasn't inexpensive, but it get used very frequently. It was money well spent.

dear brian - i'm really happy to hear that.

i'm mostly using the receipts of mr schakenda - a norwegian baker almost wholly dedicated to bread, working from his fabulous lom bakery:

The one pictured at the link is the one we have: http://www.bluestarcooking.com/products/...-wall-oven

One difference is the blue star emblem. Ours is brushed SS, same as the oven and not blue as seen in the picture. Only the front of the oven is seen because it's a built in. The spaces above and below the door is for the burner (below) and controls and regulator above. That maximizes the room in the oven which is already quite small. But the oven isn't the magic. I could make bread in our old oven, it's just that it broke. It simply wasn't designed to be used, this one is.

But it didn't happen without a picture...

It looks as though the emblem could be blue, but that's just because of the lighting of the shiny brushed SS.
