Has anyone ever smoked nuts? My neighbor smoked some mixed nuts and brought me some. They're really good. I'm interested in instructions and recipes if anyone has done this.

If I had to guess, I'd first roast them to have some control over that process. Then allow them to cool, and cold smoke them on a screen until they have the smokiness that you like. You might want to oil them with a neutral tasting oil (not dripping) before smoking to help the smoke stick. Then salt and enjoy.

One caveat... if it's anything like smoked cheese they might require some time to age. I find that cold smoked cheese likes at least a month to age and more is OK. Even frozen aging results in a better tasting and darker appearing product. I've never smoked nuts so that's just something to be aware of the possibility.

It's been cold so I haven't ventured over there. I'll get over there soon and let you know how he did it.
