Which is the best stropping leather out there I have cow and horse and some saddle leather so any suggestions would help

Whichever you prefer the draw/feel of. There is no clear out & out winner.

As long as the leather used is tanned well and comes from a good hide, it is good.

I guess that is the problem I have used all three just experimenting and I figured there was always a better strop than what I have

The only difference with other strops is the exoticness.

Although, cordovan has no equal. It's so slick. Better? No, I hardly ever use mine. Prefer the edge the horse gives. Most of the time I just use a cheap bridle leather strop just in case I strop too fast and nick something expensive. Works just as well as my strops that cost 10x as much.

I do prefer the horse edge though. Personal preference though.

Better? Hard to say.

I've had most of the usual strops - TM Latigo, SRD 1, steerhide, horsehide, shell, etc.

My Shell strop (a vintage Sears) is the slickest of my strops and it gets used the most. However, I also like my Roo hide one, and my HA bridle leather one.

I've never tried a Kanayama.

I like some more than others, but I wouldn't be able to tell you which is better, as that's a personal thing.
