The Potato Bacon Cheddar Tart is a family favorite around here and it is fairly simple to make.  There is a link to the video on how to make it below.  I do like to change it up a bit and include sweet potatoes and various cheeses and seasonings.  The pictures below are of one that I made using a Memphis Rub for seasoning with a bit of additional allspice and Gruyere and Kerrygold Dubliner cheeses.  Enjoy!

I'm salivating. Yeah, it looks delicious! Recipe stolen and in my files. For a 2.5 hour oven it either needs to be done in the outdoor cooker or wait for winter. But it will be made. Most of our friends won't eat bacon because it doesn't agree with them, that means there's more for me and the wife. :-)

BTW, still salivating.

2 pounds of Benton bacon would be nice but I would have to mortgage house for that.  Yum.  I haven't seen Michael Smith in years.  great receipe
