So I ended up with getting two: the ivory with silver pewter and the tortoise with golden pewter.
While I still struggle with the "pewter" aesthetically, I find the knots to be EXCELLENT in softness, density and shape.
I would rate the knot above shavemac 2 band silver tip in softness and face feel.

I see the pewter design, and think: thats where all the soap will build up.

So far this has been no issue while using. And post use it is rinsed off easily. For me it is more aesthetics, but that is very subjective obviously.
The heft and balance of the handle is very good. The knot is excellent. The price is not outrageous for what you get.
Will the pewter stand the test of time...? We will see.

The ivory is lovely.  I can understand your "struggle" with the pewter ring, but it does add character to what otherwise would be a very plain handle.

These two make a great couple. The Ivory looks quite special though. Regarding your rating of the knots, I agree 100%.

High praise for these knots. Well deserved I'm sure. I go back and forth on the pewter/gold band, sometimes I like the look and other times, not so fond of it.

So I ate my words. I didn't think I would like the SV 2.0 brush but wanted one to really see and feel the potential of the knot. Got one and I really like the overall experience. I will likely get the new poplar wood.

Can anyone give some comparisons of the knots on the 2.0 vs the Paragon brushes?

Similar hair the 3omm is more dense and of course bigger. The 2.0 tips seem a drop softer. Both beautiful brushes at an excellent value

I have owned 3 SV 2.0 brushes and sold two. They are a nice brush but may not be for everyone. The pewter ring adds almost no weight to the brush handle and actually makes a nice spot with with to grab the brush as you lather your face. The down side to the pewter is that a soap build-up will occur over time. A tooth brush will quickly clean the pewter up like new. The brush I kept is the Faux Ivory, I sold my Ebony and Horn brushes a couple of months ago. Why did I sell two of my SV brushes? They are a nice big, full and soft brush but for me I wanted brushes that were a bit more unique in design and smaller in size. If you get a SV brush you are bound to enjoy it.
Here is my pewter ring with soap scum:
