I'm looking to buy one of each from these two brands.

In stainless steel. I don't like to fiddle with seasoning.

Anyone who owns cookware from these two brands ?

Searching for a great sauter pan and also a frying pan/skillet - both for vegetables and risotto.

The frying pan needs to be 28 cm and the sauter pan needs to be 24 cm with a lid and a extra handle.

I cook/sear/roast my meat and steaks in my Le Creuset enameled cast iron 30cm/12" pan, that also goes into the oven.

Ok, doesn't matter.

Just ordered the Mauviel M'150 Copper pan in 26cm/10"

Both Mauviel and Demeyere are high quality brands, as is Falk and E. Dehillerin. I don't think you can go wrong with any of these, but if I had to choose I'd go for Falk or Mauviel. However, if you were looking for induction compatible copper cookware, I can't recommend the DeBuyer Prima Matera range enough, they are absolutely brilliant and very hassle free. I couldn't live without mine.

You are in for a treat with that pan.  I have it's smaller brother and it's fantastic.  I have a bunch of All-Clad, both stainless steel and copper core, several Le Creuset, a few cast iron pans, and several high carbon pans.  No pan heats up faster than the my copper clad Mauviel.  My pan has a stainless steel lining instead of the traditional tin lining.  If your pan has a tin lining you shouldn't use it on high heat and you will need to be careful that you don't scratch the lining.

Was just informed Mauviel M'150 1,5 mm is too thin, more a showcase Mauviel pan. M250 2,5 mm ordered instead. $150 dearer
