It depends on the City, and, sometimes, the country.

London, England:  anything, these days.  Traditionally, it was the super duper good smell of roses, lilacs, sandalwood, etc.

Paris, France: Kind of the same, to be honest, but, never say that, in either city.  Roses, at least, would be present.  Also, there would be a fougère option, or, sometimes just a fougère, which would include roses, and, sometimes sandalwood, to give a balanced profile. Also, there was a strongly scented rose aftershave, which had, almost, too much menthol.

Florence, Italy:  Like Proraso.

Rome, Italy:  It depends on whose shop it is.

Zürich, Swiss Confederation:  Like the lather machine, and, Pitralon.

I think of barbershops smelling of the lather machine, and, local aftershave.

Also, ETA:  Also, in the USA:  Lavender, and, Vetiver.

When I was in my teens I used to go to Tom Coppetto's (sp?) barber shop and he had a display of Stephen's Hair Tonic which he would sell bottles of, and use on customers. He would shave the back of the neck after the haircut, and around the ears, and use Witch Hazel, probably Dickenson's to cool it off. Good old days when the haircut was a buck. I remember when they were two bits, but a dollar was hard to come by back then.

For me, it's simply a clean talc scent. I do enjoy the modern interpretations like CRSW american barbershop, and Mike's barbershop.

Growing up it was the on-base barbershop wherever dad was stationed and it always included tobacco. Cigarette, cigar, pipe.

I got to live in LA during the late 60s, topless everything and the San Diego minskirt (AkA a belt) and at the time the smell of the eucalyptus trees reminded me of Little Italy barbershops.

That must have been something.

Clubman talc, Chesterfields, and bourbon. Clyde the barber smoked while he barbered and apparently had some affection for Old John Barleycorn...
