Hi,
   I don't have an adjustable razor and was wondering how they work, what they're intended for and what they do differently from a 'fixed, non-adjustable' razor?

First, they adjust. Your fixed gap razor, lets say has a .39mm gap, you use it....and you are happy.....you think.
With an adjustable, you can try, .45mm.gap, WOW! that's better. Now you try .50, WOW....WOW that's it.
Now you have found "shaving Nirvana". 
That's what an adjustable can do..... Cool

It can also be used for adjusting aggressiveness between passes, etc. An adjustable is like having multiple razors in one.

I just got a Rex Ambassador which is infinitely adjustable, so if you like a setting at let's say 0.44mm voila there it is. If you have a fixed razor, well, it is fixed...

I've been thinking about acquiring an adjustable for a while now. I love my current razors, but a bit more variety might be nice.

Can anyone make a recommendation for a really good adjustable?

How do you like it so far? What blade are you using?

If you prefer vintage Gibbs, Fatboy, Slim. If you prefer Modern the Rex is my choice.

I would recommend trying a vintage gillette slim or fatboy before shelling out the big bucks on a Rex. With a little patience and looking, they can be found at garage sales, estate sales or antique shops. I got my slim from a guy selling them from an estate sale online. I got my fatboy from a garage sale for $7.5. Both need cleaning and polishing, but the mechanisms seem ok.

I have the Rex and I really like it, but I don’t really use the adjustability that much. I’ve tried settings 4, 4.5, 5.5, and 6.5. I like setting 4 the best, so I just keep it there.

Depends on which adjustable I'm using. On Fatboy and Slim I start with it on highest setting on the first pass and then go down to 6 for the rest of the shave. With my vintage Gibbs I just leave it on setting 5 and it's my favorite of all adjustable razors and that includes much more expensive ones like Toggle, Mikron and Rocnel Sailor and Rex.

I have a Rockwell 6s, Merkur Futur and a Q-Shave. Once I found what works best, I just leave it there.
