I did some smoking on my gas grill yesterday and everything came out perfect. Brisket, burnt ends, and 2 racks ribs.

Yeah, I smoked a turkey on my dad's decrepit gas grill last Christmas.  It came out great, but it was kind of a hassle.  Mainly because I have a kamado and smoking wood chunks rather than chips, which would work better in a gas-grill set up.  This year, we are hosting Thanksgiving so I'm going to be smoking a big ol' turkey at home!

We also just picked up a quarter of a cow (my wife's co-worker owns a farm and slaughtered a couple of his cows) and brisket was one of the cuts we got.  I've never made brisket before so I'm looking forward to smoking that puppy.  We also got a bunch of other cuts, such as london broil and shoulder roast and even a couple of chuck roasts, that I might end up smoking as well.

Yeah I read that. I also read that it makes a pretty good “practice” brisket because it’s more forgiving.

Yup. It's like pork butt in that. You'll like pulled beef trust me on that. Maybe just a hair dryer (not a "hair dryer"), just a hair, but still delicious. Use the right spices; garlic, W' sauce, coriander, and black pepper for me, and be very generous if you plan on smoke. But you aren't cooking for me.

I wish it was still on my everyday menu. But it isn't. Genetics rules against me on this as I was recently corrected. I miss southern BBQ more than you can possibly imagine.

If you try it let me know how it works out for you.

BTW, the pix are killing me, but to do the same WOULD kill me.
