I developed a craving today for Russian Tea Cookies, but I did not have any powdered confectioner's sugar.  So I went ahead and made some with granulated sugar.  They're not bad.  I'll have some this evening while watching a recorded Agatha Christie's Poirot episode.

The cookies look good to me. I like to bake cookies. Are you willing to share the recipe?

Thanks. And Merry Christmas

Sure.  And merry Christmas to you too.

Ingredients:
1-1/2 cups butter
3/4 cup confectioner's sugar
1/8 tsp (a pinch) salt
1-1/2 cups finely ground almonds
4-1/2 tsp vanilla extract
3 cups sifted all-purpose flour
1/3 cup confectioner's sugar for rolling

Directions:
1.Preheat oven to 325 degrees F.
2.Cream butter in a bowl and gradually add 3/4 cup confectioner's sugar and salt. Beat until light and fluffy.
3.Stir in almonds and vanilla.
4.Gradually blend in flour and mix well.
5.Shape into 2-3 tsp size ball for each cookie with hands.
6.Place an inch apart on ungreased cookie sheets and bake 15-20 minutes. Do not brown.
7.Cool slightly (2-3 minutes), then roll each cookie in the extra confectioner's sugar.
8.Finish cooling on racks.
9.Roll again in confectioner's sugar when cool.
