That's an interesting way of cooking ribs on the grill.  I usually see them lying flat.  Were you smoking them?  I see the wood chips on the coals.

Yes, smoking. Took pics about 30 mins ago. Been smoking about 1 hr in pic. They are a little crowded but there is some room around them for smoke to impact meat. Using a slow-n-sear on my Weber 22 kettle. Didn’t feel like dragging out my WSM.

I'm all over the ribs man. I use the Weber as well and next time I'll wrap the ribs the way you did it. I guess they are short ribs? Beef? We usually do pork.

After 6 hrs, time to eat. Pork loin back ribs, 3 - 3.5lb each rack.
