Me too zennhorst. I saw it and immediately told myself, "I can eat that". I do that a lot anymore since being in ketosis.
I just took a few pounds of bacon out of the freezer due to this thread. It'll be a good change of pace from sausage.

Keto is short for ketosis. This refers to cutting carbs mostly out of your diet, so that your body transitions to using protein and fats for energy. One of the byproducts of breaking down the fats and proteins on grand scale is ketones. When these are being dumped out of the body in your urine it’s a sign that you have reached ketosis Mel. The Atkins diet puts folks in a state of ketosis.

Dear Matt,
Apogee (Ulrich) is a person of pure class in almost all that he does in life.
Bacon of course is no exception to this.
You can find Lardo and pancetta at most of the better butchers here in Europe. In Italy, Switzerland and France pancetta is available at most of the better supermarkets too.
I do prefer pancetta over bacon for most stews and soups, but a good piece of bacon, that you cut yourself is not that much different to pancetta in my view.
Lardo is special kind of boar fat that is enhanced with rosemary, oregano and/or thyme and other spices, which makes frying in Lardo infuses the dish with this thick moist juicy spiced flavour.
And yes, I’m also into serious cooking myself. I find most of my inspiration in Italian, French, Thai and Chinese cuisine of course with the occasional German and always danish touch added.
Btw you also seem to be a Gentleman, who strives for perfection and perfecting your techniques in most of what you do in life, Matt.

Perfection is also a noble endeavor, and I fail at it more than I care to admit...but that doesn’t deter me from giving it my best!

Backfat is a similar product to speck depending on the country. It has a very "porky" flavor. I used it when I wasn't in ketosis thin sliced and warmed up just to the transparent state and eaten on a biscuit or toast. You don't really want a hot pan when warming it a warm pan is hot enough.
