Cut lamb to pieces, fry with oil a few minutes in a casserole. Add chopped onion, simmer 5 more minutes.
Add sliced fennel and mashed tomatoes or peeled tomatoes. . Get Italian tomatoes in a can, they are most probably better than fresh tomatoes you can get this time of the year. Salt and pepper.
Let all boil some fourty minutes so that meat and fennel will be soft, remove lid of your casserole, so that the sauce will get like a paste.
Chop the fennel green and add before serving.
Serve hot with some decent red.
