Not a Peel a Pound Soup but a borscht recipe: water, salt, onion, carrot, cabbage, potatoes, grated beets, Vegeta, a dash of vinegar. Sour cream when serving.

About 20min to put together, from cold to boiling. Ingredients go in that order. 10min simmer after dropping the beets.
That simple.
My pot is 6L. Water 3.5 - 4L, salt one Tbs, one small onion, one medium carrot, half of a small cabbage (shredded), three large potatoes cubed, five medium beets (3" dia), Vegeta one Tbs, vinegar 2-3Tbs.

Vegetable borsh, including borscht, is always served hot during cold weather. Most of them go well served cold during summer.

I just googled 'cabbage soup peel a pound'.  Lots of info on it.  It's a one week weight loss thing.  Looks good to me, I love cabbage. 

Beets too and love borscht.  Mom used to make it often.  Will have to try VerbaVolant's recipe but don't have Vegeta will have fake it.
