I've got a GUESS, Charlie: if you want a steeper blade angle with a cut-throat razor, just adjust your grip (or change the angle); no knobs or levers to worry about. And with a DE adjustable razor, you're stuck with someone else's idea of what each setting means/does. A straight razor is not confined by click-stops, and since angles are infinitely divisible, the straight-edge razor is "the ultimate in adjustability."

With a straight razor you don't have a razor head holding the blade in a fixed position, or a safety bar between the blade and your skin. What you have instead is the ability to make continual, unlimited adjustments in the blade angle by how you hold the blade. Those adjustments, which can range from subtle to major, become intuitive with experience.
