Great question.  It's an Ashi Hamono 270mm sujihiki.

Thanks.  One of the great aspects of living in Miami is the availability of fresh seafood.  A lot of seafood is caught off Florida waters and goes straight from the fishing boats to the markets.

Great question.  It's an Ashi Hamono 270mm sujihiki.

I have two Ashi Hamono knives. A Guyto 240mm and a Petty 150mm, both in White #2. They are my favorite knives of all the ones I have. These two are always on my cutting board and the rest are in my knife bag and I take one out here and there!

Can I ask you how you seared it? On bbq, oven or else and ar what temperature? I'd be interested to try seared fish eventually...

Thanks for the photo.  Ashi Hamono makes awesome knives.  I have the 240mm Gyuto in both White No. 2 and Swedish Stainless.  By the way, that's a nice cutting board.
